当归生姜羊肉汤这可是个名方

天气越来越冷,很多人会选择食补,尤其是药膳食补来养生,特别是爱炖汤的人,都知道当归生姜羊肉汤这个经典的传统药膳。
《金匮要略》“腹满寒疝宿食病脉证治第十篇”曰:“寒疝腹中痛及胁痛里急者,当归生姜羊肉汤主之。”“妇人产后病脉证治第二十一篇”记载:“产后腹中疞痛,当归生姜羊肉汤主之;并治腹中寒疝,虚劳不足。”意思是具有温中补虚、祛寒止痛、温中散寒的功效。
当归生姜羊肉汤组成也很简单,为羊肉(一斤)、生姜(五两)、当归(三两)三味,为药食两用方,堪称“药物之精,医方之祖”,应用非常广泛。方中当归养血活血,生姜散寒止痛,羊肉为血肉有情之品,养血补虚散寒;三味合用,共奏温中、散寒、补虚、养血之功效。产后血虚,见头晕,大便难,或恶露不净,乳汁不畅,腹中冷痛等,调养最宜。也可用于消化系统疾病,如肠易激综合征、消化性溃疡;妇科疾病,如闭经、痛经;风寒感冒,对经常感冒者或产后外感风寒也适宜。
在《中国药膳大典》(2002年版)是这样烹煮的:当归30g、生姜30g、羊肉500g。羊肉去骨,剔去筋膜,入沸水锅内焯去血水,捞出晾凉,切成5cm长、2cm宽、1cm厚条状;砂锅内放清水,下入羊肉,放当归、生姜,武火烧沸,去浮沫,文火炖1.5小时至羊肉熟烂;食肉饮汤,一日2-3次。
